Ingredients
1 lb ground chicken
1 cup broccoli, finely chopped
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for greasing)
Instructions
- Preheat the oven to 375°F (190°C). Grease a baking sheet with olive oil or line it with parchment paper.
- In a large mixing bowl, combine the ground chicken, chopped broccoli, cheddar cheese, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper.
- Mix everything together until well combined. The mixture will be slightly sticky.
- Shape the mixture into patties about 1/2 inch thick and arrange them on the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway, until golden brown and cooked through.
- Serve warm, optionally with a side of veggies or a dipping sauce like ranch or buffalo sauce.
Notes
Add extra vegetables like finely chopped carrots or spinach for more nutrition.
Swap the cheddar for mozzarella or gouda for a different flavor.
For a gluten-free version, substitute breadcrumbs with gluten-free breadcrumbs or almond flour.
Spice things up by adding cayenne pepper or red pepper flakes.
