Ingredients

1 1/2 cups all-purpose flour

3/4 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups old-fashioned oats

1/2 cup plus 2 tablespoons unsalted butter, softened

1 cup plus 2 tablespoons packed brown sugar

1 large egg

2 tablespoons milk

3/4 teaspoon vanilla extract

2 baking apples, peeled and chopped

20 caramels, unwrapped

2 tablespoons water

Instructions

  1. Preheat & Prep:

    • Preheat oven to 325°F (163°C).
    • Line baking sheets with parchment paper.
  2. Mix Dry Ingredients:

    • In a medium bowl, whisk together flour, baking soda, and salt.
    • Stir in the oats.
  3. Cream Butter & Sugar:

    • In a large bowl, beat butter and brown sugar with an electric mixer until creamy.
  4. Add Wet Ingredients:

    • Mix in the egg, milk, and vanilla extract until light and fluffy.
  5. Combine & Fold in Apples:

    • On low speed, gradually mix in the dry ingredients.
    • Stir in the chopped apples.
  6. Shape & Bake:

    • Drop tablespoon-sized scoops onto the baking sheets, spacing 2 inches apart.
    • Bake for 14 minutes or until golden.
    • Let cool on a wire rack.
  7. Prepare Caramel Drizzle:

    • In a small saucepan, melt caramels with water over low heat, stirring for about 7 minutes until smooth.
  8. Drizzle & Set:

    • Drizzle warm caramel over cookies.
    • Let set for 15 minutes before serving.
