Instructions
- Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until fully combined.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
- Chill the Dough: Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll Out the Dough: Roll out the chilled dough to about ¼-inch thickness. Use heart-shaped cookie cutters to cut out shapes.
- Bake the Cookies: Transfer the cut-out dough to baking sheets and bake for 10-12 minutes or until the edges are golden. Cool completely.
- Prepare the Marshmallow Fluff Filling: Beat together marshmallow fluff, softened butter, powdered sugar, and vanilla until smooth. Add food coloring if desired.
- Assemble the Cookies: Spread marshmallow filling on the flat side of half the cookies. Top with remaining cookies to form sandwich cookies.
- Decorate: Use colored icing or edible markers to add fun messages like “Be Mine” or “XOXO.”
