1 package Cheddar Bay Biscuit Mix
1 tsp garlic
1 tsp Italian seasoning
For the Crab Filling:
1 pound lump crab meat, fully cooked
¼ tsp paprika
½ tsp onion powder
½ cup mayonnaise (plus more if needed)
1 tbsp mustard
½ sleeve Ritz crackers, crushed
1 cup grated Parmesan
For the Topping:
2 tbsp melted butter
1 tsp lemon juice
Instructions
- Prepare the Biscuit Dough: Follow the package instructions to prepare the Cheddar Bay Biscuit mix. Set aside.
- Preheat the Oven: Set to 375°F (190°C) and grease a 12-cup muffin tin with nonstick spray.
- Make the Crab Filling: In a bowl, combine lump crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Stir well, adding more mayonnaise if needed for consistency.
- Shape the Biscuits: Lightly flour your hands. Take a scoop of biscuit dough, flatten it into a cup shape, and add a spoonful of crab mixture in the center. Cover with more biscuit dough and seal the edges.
- Bake: Place each stuffed biscuit into the muffin tin and bake for 12-15 minutes or until golden brown.
- Prepare Lemon Butter: While baking, mix melted butter with lemon juice.
- Finish & Serve: Brush the warm biscuits with lemon butter and serve immediately.
