Ingredients
4 English muffins, split in half
4 large eggs
1/2 lb breakfast sausage
1 cup mild cheddar cheese, sliced
1 cup sawmill gravy
Salt and pepper to taste
1 tablespoon milk (for scrambling eggs)
Instructions
-
Preheat the broiler and lightly toast the English muffins until golden brown.
-
Cook the sausage in a cast-iron pan until well done. Remove the sausage and use the drippings to prepare the sawmill gravy.
-
In a separate skillet, scramble the eggs gently with milk, seasoning with salt and pepper.
-
Place the toasted muffin halves on a baking sheet. Spread a layer of sawmill gravy on each muffin half.
-
Top each muffin with scrambled eggs, sausage, and sliced cheddar cheese.
-
Broil the pizzas for 2-3 minutes, until the cheese melts and becomes bubbly.
-
Serve hot and enjoy!
Notes
This recipe is customizable: try adding vegetables like mushrooms, peppers, or spinach, or swap out the cheese for mozzarella or pepper jack.
For a spicy kick, add spicy sausage or top with hot sauce or red pepper flakes.
You can make it ahead of time by assembling the pizzas and storing them in the fridge until ready to broil.
