Ingredients

Dry Ingredients

  • 2 ½ cups crispy rice cereal
  • 2 cups quick-cooking oats
  • ½ cup raisins

Wet Ingredients

  • ½ cup packed brown sugar
  • ½ cup light corn syrup
  • ½ cup crunchy peanut butter
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Pan: Grease a 9×13 inch baking dish with cooking spray to prevent sticking and set aside.
  2. Mix the Dry Ingredients: In a large bowl, stir together the crispy rice cereal, quick-cooking oats, and raisins until well combined. Set aside.
  3. Make the Syrup: In a small saucepan over medium heat, combine the brown sugar and light corn syrup. Stir constantly and heat just until the mixture starts to boil. As soon as it boils, remove from the heat.
  4. Add Peanut Butter and Vanilla: Immediately stir the peanut butter and vanilla extract into the hot syrup mixture until smooth and fully blended.
  5. Combine and Mix: Pour the warm syrup mixture over the cereal and oat mixture. Mix thoroughly with a spatula or large spoon until all the dry ingredients are evenly coated.
  6. Press into Pan: Transfer the mixture to the prepared baking dish. Use the back of a large spoon (or greased hands) to press the mixture firmly and evenly into the pan.
  7. Cool and Cut: Allow the granola mixture to cool completely in the pan. Once cooled, cut into 18 bars or squares and enjoy!
