1 cup vegetable broth
1 cup heavy cream
Zest of 1 lemon
1/4 cup freshly squeezed lemon juice
1/2 cup grated Parmesan cheese

Instructions

In a large skillet or pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the vegetable broth, heavy cream, and pasta to the pan. Stir to combine.

Bring the mixture to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and the liquid has mostly absorbed.
